We are currently seeking a dynamic and experienced Manager, Stewarding to join the pre-opening team at Kandy Myst by Cinnamon, our exciting new property located in the heart of Sri Lanka’s central highlands. This is a key leadership role that directly supports our mission to maintain world-class cleanliness and hygiene standards in all culinary and kitchen operations.
Job Overview
As the Manager, Stewarding, you will be responsible for overseeing the daily operations of the stewarding department, including the sanitation and cleanliness of all kitchen areas, dishwashing operations, back-of-house support, and waste management. Your leadership will play a pivotal role in ensuring smooth coordination with culinary and service departments, adherence to health and safety standards, and the successful implementation of pre-opening procedures and systems.
This role is ideal for a hospitality professional with a passion for operational excellence and a track record of success in stewarding management, especially in pre-opening environments. You will be instrumental in establishing the stewarding department from the ground up, building a high-performing team, and developing sustainable and efficient operating procedures aligned with the values of Cinnamon Hotels & Resorts.
Key Responsibilities
Operational Management
- Set up the stewarding function for the hotel, including layout design for work areas, equipment setup, and cleaning stations.
- Develop and implement standard operating procedures (SOPs) for all stewarding functions, ensuring consistency and efficiency in all tasks.
- Monitor and maintain cleanliness and hygiene in all kitchen and back-of-house areas in strict accordance with local and international health and safety standards.
- Supervise the dishwashing process to ensure optimal performance and minimal breakage or loss of equipment.
- Manage kitchen equipment inventories and work closely with the culinary team to ensure that all necessary tools and utensils are clean, available, and in good working condition.
- Schedule and coordinate cleaning operations, including deep cleaning of kitchen areas, hood systems, coolers, and food preparation zones.
Team Leadership
- Recruit, train, and manage a team of stewards, ensuring they are properly equipped with the knowledge, tools, and motivation to perform their roles effectively.
- Foster a positive and collaborative work environment that encourages accountability, continuous improvement, and a commitment to high standards.
- Conduct regular training sessions focused on hygiene protocols, equipment handling, cleaning techniques, and safety practices.
- Monitor performance of stewarding staff, providing feedback and taking corrective action where necessary.
Health, Safety, and Sustainability
- Ensure full compliance with health and safety regulations as per both internal brand guidelines and statutory requirements.
- Oversee the proper handling and storage of cleaning chemicals and materials, ensuring all staff are trained in their safe use.
- Implement and manage waste segregation, recycling programs, and other sustainability initiatives in alignment with Cinnamon’s environmental commitments.
- Work closely with hotel engineering and maintenance teams to address equipment malfunctions or repair needs swiftly and effectively.
Inventory and Cost Control
- Monitor usage of cleaning supplies, chemicals, and kitchen consumables, ensuring cost-effective procurement and minimal wastage.
- Maintain up-to-date records of inventory levels, cleaning schedules, and health inspection reports.
- Collaborate with procurement and finance departments to forecast requirements and manage budgetary allocations for stewarding operations.
Pre-Opening Responsibilities
- Assist in the recruitment and onboarding of the stewarding team during the pre-opening phase.
- Develop and document all stewarding-related SOPs, checklists, and training manuals.
- Liaise with project and operations teams to ensure that all stewarding infrastructure is aligned with brand standards and operational requirements.
- Participate in mock operations and soft openings, ensuring that stewarding services meet operational and guest expectations from day one.
Qualifications & Experience
- A minimum of 5 years of experience in stewarding or kitchen operations management, preferably in upscale or luxury hospitality environments.
- Demonstrated experience in pre-opening operations, including planning, setup, and execution of stewarding functions.
- Proven leadership experience with the ability to manage a diverse team and collaborate effectively across departments.
- In-depth understanding of hygiene and food safety regulations such as HACCP and ISO standards.
- Familiarity with the latest dishwashing equipment, sanitation techniques, and waste management practices.
